FW woods: shallow face vs. deep face
what does all it mean? what's more forgiving?

It depends on what you use your fw for. If you use it primarily for tee shots a deeper face would be more suitable. If, however, you use it primarily for shots off the turf a shallower face would be more forgiving as it would be easier to get the ball up.

btw: a deep face means there is more distance from sole to crown and a shallow face means there is less distance from sole to crown.

Off the FW and rough you want a shallow faced fairway wood as the CG and sweet spot is lower in the face and this helps get the ball in the air off the ground. A deeper faced FW means the CG and sweet spot would be higher in the face. It would be more suitable off the tee but hard work getting the ball airborne of the FW/rough.
You can still use a shallow faced FW off the tee, just tee it really low.

Not to add more confusion for you, but I prefer mid-faced fairway woods. That is, with a face depth between shallow and deep. The fairway wood is probably the least used club in my bag, but I have it there to have the option for tee shots or off the deck when I have a really good lie. Since I use it for both, I've found a mid-faced fairway wood to be ideal.

Deep Faced = Cobra SZ
Mid Faced = Taylormade r580 (2003 models), Sonartec SS 2.5 or 02
Shallow Faced = Adams Ovation, Orlimar Tri-Metal

FW Woods - Shallow or Deep Face?
One more thought on face height. I used to play original Tight Lies FW's which have a face height of slightly more than 1" (about 1-1/8"). While I generally liked these clubs, they were of questionable value in the rough. On fluffy lies, it is very easy to get under the ball and pop it up like a LW shot - 75 yards out and 75 yards up in the air.
In fluffy lies, I'd guess that 50% of the time I had a good shot, 25% were pop-ups and 25% were skulled shots as I was trying to protect against a pop-up. As others have mentioned, however, shallow-faced clubs do help get the ball in the air quickly. Like many things in life, with the shallow clubs you have to pick your poison!
